🍴 Bonus:  Southern Gluten-Free Cornbread

Southern Gluten Free Corn Corn Bread

Embracing my Southern roots while navigating dietary needs has led to creative adaptations in the kitchen. This gluten-free cornbread recipe is inspired by my Grandma Birdie’s methods, using honey and Greek yogurt as substitutes, and the time-honored tradition of using bacon fat for that unmistakable Southern flavor.

Ingredients:

  • 1 cup gluten-free cornmeal
  • 1 cup gluten-free flour blend
  • 1/4 cup honey (adjust to taste)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup Greek yogurt (to mimic the tanginess of buttermilk)
  • 2 large eggs
  • 1/4 cup melted unsalted butter (or dairy-free alternative)
  • Bacon fat for greasing the skillet and adding that extra touch of flavor

Instructions:

  1. Preheat your oven to 400°F (204°C). Generously grease a cast-iron skillet with bacon fat, warming it in the oven for a few minutes to get it hot.
  2. In a large mixing bowl, combine the cornmeal, gluten-free flour blend, baking powder, and salt.
  3. In a separate bowl, whisk the eggs, then blend in the Greek yogurt, honey, and melted butter until well mixed.
  4. Pour the wet ingredients into the dry ingredients, stirring until just combined. Don’t overmix to keep the cornbread tender.
  5. Retrieve the hot skillet from the oven, pour in the batter, and gently spread it out. For that special Grandma Birdie touch, drizzle a little extra bacon fat over the top and lightly mix it into the batter with a fork.
  6. Bake in the preheated oven for 20-25 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.
  7. Allow the cornbread to cool slightly in the skillet before serving it warm, inviting that perfect crust only a cast-iron skillet can provide.
